Slow Cooker Beef Fajitas (Baby Led Feeding-Friendly!)

Who doesn't love a good Taco Tuesday? Especially with an easy recipe like this! Just slice up your veggies, throw in your chuck roast, spices, lime juice, and tomato sauce, and set your slow-cooker. This recipe is also a great way to sneak in iron for you and your child as the beef is an excellent source of heme iron!


Wait, chuck roast?! What kind of fajitas use chuck roast?! The kind that's made to be Baby Led Feeding friendly! This is a great recipe to serve to kiddos 6 months and up! The chuck roast shreds easily so your child can easily "chew" and consume it.


Slow Cooker Beef Fajitas


Gather Your Ingredients:

  • 1 yellow onion, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium-sized chuck roast

  • 2 teaspoons cumin

  • 2 teaspoons paprika

  • 1/2 teaspoon chili powder

  • 4 cloves garlic, minced

  • 1 lime, juiced

  • 1 15 oz can no-salt added tomato sauce

  • For parents: flour tortillas, sour cream, cotija cheese, salsa

Let's Get Cooking:

  1. Place sliced onions, peppers, and chuck roast in slow cooker. Top with seasonings, garlic, lime, and tomato sauce.

  2. Cover and cook on high for 4 hours or low for 8 hours.

  3. Remove cuck roast from slow cooker and shred.

  4. Add shredded chuck roast back into the slower cooker and stir until covered in peppers and juices.

  5. Serve as is to kids with a side of homemade guacamole. Can serve with tortillas, sour cream, cotija cheese, salsa, and guacamole for adults.

Note: For a quick and easy homemade guacamole that is kid-friendly, mash 2 avocados with a dash of black pepper and juice from half of a lime.
